My grandmother's 1970s sifter ended my flour fight with pancakes
I used to measure flour by dumping it straight into the bowl, which meant my pancakes were either bricks or soup, you know, real hit or miss. Last Tuesday I found her old rotary sifter in a cabinet behind the instant potatoes, and now I actually sift twice before mixing, even for pancakes. It takes like 90 extra seconds but the batter is so fluffy I could cry, especially since my usual swap of buttermilk for milk plus a splash of vinegar finally gets to shine. Has anyone else had an old kitchen tool completely change how they cook, or am I just late to the sifting party?
