Guy at the farmers market told me I was roasting my beans wrong

Last Saturday I was at the local market buying some Ethiopian Yirgacheffe and this older dude just walks up and says I'm ruining my beans by storing them in the freezer. He explained how the moisture messes with the oils and makes them taste flat. I've done it that way for like 3 years and swear my coffee tastes fine. Has anyone actually done a side by side test with frozen vs room temp beans?

People act like you ruined a whole batch if the color's off by a shade. Unless you scorched them or they taste like burnt tires, it's probably still drinkable coffee. Ngl, half the time the "wrong" roast just gives you a different vibe for the day.

Man that's exactly my experience (and probably also my excuse for being a bad roaster). The first time I got a batch that was a little uneven I thought I'd messed up everything, but you know what? Still made a perfectly good cup of cold brew. My friends couldn't tell the difference, either. Sometimes the "ruined" batch ends up being my favorite because it has this wild, unpredictable flavor that you just can't plan for. Honestly, most of my best roasts have been happy accidents where I forgot to check the timer or got distracted by a podcast (classic). As long as it's not a fire hazard or tasting like charcoal, I'm calling it a win.
