Cinnamon in the beans, not on top. I'm never going back
Everyone I know sprinkles cinnamon over their latte foam, but I got tired of that gritty first sip. So last month I started tossing a quarter teaspoon of Saigon cinnamon into my ground coffee before brewing in my $25 Mr. Coffee drip machine. The flavor comes through way more even and I don't have to stir anything, it just works. Has anyone else tried mixing spices into the grounds instead of garnishing after?

My buddy swears by putting a pinch of cinnamon in the filter basket too, but he also leaves his coffee maker on for like six hours and drinks it cold... so I'm not sure he's the best judge of flavor.

That "gritty first sip" thing is more about the grind size than where you put the cinnamon. Sprinkling it on top never makes it gritty unless you're using pre-ground dust, you just need finer cinnamon or a quick stir. Saigon cinnamon in the grounds is solid, but you're fixing a problem that shouldn't exist in the first place.
