My mise en place station collapsed mid-service last Friday
Racked up one too many 6 pans on a flimsy shelf unit and the whole thing buckled right before the dinner rush. Ended up on my knees sorting 14 quarts of chopped veg off the floor while the line cook behind me just kept calling orders. Anyone else switched to rolling carts after a storage failure like that?
