Line cook at my first job in Austin told me to stop tasting with the same spoon, and now I'm questioning everything
He said you can't really know a dish if you're tasting it clean every time, you have to taste it the way it goes out, and half the guys I've worked with since say that's gross. Is he right or just old school?
