Just read a crazy stat about kitchen fires in a safety report from the NFPA

I was looking at the National Fire Protection Association's yearly report and saw that 66% of restaurant fires start in the kitchen, mostly from cooking equipment. That's way higher than I thought. The report said a big chunk of those are from grease buildup in hoods and ducts that don't get cleaned enough. It made me double-check our cleaning schedule right away. Has your spot had a fire inspection recently, and what did they say about your hood cleaning logs?

Saw a local news story last month where a food truck fire was traced back to a clogged grease trap in the vent hood. The owner thought they were cleaning it enough but the inspector showed them spots they kept missing. It really stuck with me because our own filters can look okay on the surface but get nasty up inside the ducts. We just had our quarterly cleaning done and the guy pointed out a section of ductwork we need to watch more closely.
