Sounds like your neighbor was committed to the whisk life. Read somewhere that over-whisking can scorch the flour and make it bitter. @river_allen might have a point about that.

Over-whisking scorching the flour is a new one for me. @river_allen, when you talk about dark roux turning bitter, is there a specific color or time when that happens? I've made roux before and it got darker than I wanted, but I didn't notice bitterness. What kind of heat were you using?

Heard someone say once that if you keep whisking a dark roux it can actually turn bitter. I mean, all that constant agitation after it's done might burn the flour a little extra. Maybe it's just me but that would explain some weird tastes I've had.
