Am I the only one who tried to flambe table side and set off the whole restaurant alarm
So last Friday at my spot in Boise I got the bright idea to do a bananas foster flambe right at table 12 for a couple celebrating their anniversary. I poured the rum, tilted the pan toward the flame, and a three foot fireball shot up straight into the ceiling sprinkler. Whole dining room got a shower, the fire alarm screamed for 6 minutes, and the fire truck showed up while I stood there holding a pan of burnt bananas. Turns out the rum was 151 proof and I poured way too much, like a quarter cup instead of a splash. Learned my lesson on proof and portions, but now I gotta ask, do you keep your flambe cart away from the sprinklers or do you just do it in the kitchen?
