Snowed-in Sunday turned into my best pie experiment yet

My flight out of Denver got canceled last month and I ended up stuck at my sister's place with a bag of overripe plums. I made a rustic tart with no recipe, just guessed the sugar and used cornmeal instead of flour for the crust, and it actually came out amazing. Anyone else find their best kitchen wins happen when plans fall apart?
