Rainout at the lake turned into my best flatbread bake yet

My fishing trip with my buddy got rained out last Saturday, so we ended up at my place trying his no-knead flatbread recipe for the first time. That one really beat my usual sticky mess of a method, and I'm wondering if anyone else found a backup plan that turned out way better than the original?

That no knead method is a total game changer once you nail the timing. The dough comes together so smooth and the crust gets that perfect chew without the messy bench scrape. Rainouts are the best excuse to try something dumb in the kitchen, so I say lean into it. Next time toss some caramelized onions or a sprinkle of zaatar right on top before it hits the pan, it takes the whole thing up a notch.
