Watched a 70 year old butcher break down a whole hog in 22 minutes at a county fair in Iowa
Last weekend I went to the Warren County Fair and there was this old timer doing a full hog breakdown demo in the ag building, and he finished the whole thing in 22 minutes while talking the entire time. He used one cimeter knife the whole way and never once looked like he was rushing, just moved like he had done it ten thousand times. Made me realize how much time I waste switching between knives, does anyone here stick to just one blade for most of a breakdown or do you all switch like I do?
