Spent $150 on a specific boning knife and it's the only one I use now

It's a Victorinox with a rosewood handle, and the balance is just perfect for breaking down shoulders all day. Anyone have a different brand they swear by for pork?

Ever try a Forschner? They're basically the same blade as your Victorinox but with a different handle, so the balance might feel off to you. Lunag30 has a point about it just being pork, but that wrong feel in your hand gets old after the third shoulder.

Have you ever tried a knife with a different blade shape for pork? I found that a slightly curved blade, not the straight one most boning knives have, lets me follow the contours of a shoulder way better. It gets into those tight spots around the joint without having to change my grip as much. That little curve made a bigger difference for me than the brand name ever did. It's worth checking out if you ever want to try something new.

It's just pork... how much difference can a curve really make.
