Gave up on the band saw for breaking down chickens and my yield went up

For 6 years I broke down whole birds on the band saw because that's how I was taught at my first shop in Fresno. Switched to a stiff 6 inch boning knife about 4 months ago after an old timer watched me lose a wing joint to the blade and just shook his head at me. My breast yield is up almost 3 ounces per bird and I'm not fishing cartilage shrapnel out of the case anymore. The saw is faster on paper but the cleanup and the lost meat were eating me alive. Anyone else ditched the saw on poultry or am I the only one late to this?

The saw is faster on paper for a reason, and losing a wing joint once in 6 years is a small price for cutting your breakdown time in half on a busy Saturday. Learn where your fingers go and the band saw will still outrun any knife you own, lmao.
