Dropped $260 on a knife sharpening system that still can't get my boning knife right

I want to hear both sides here because I'm second guessing myself. Half of you will say a good stone and practice beats any gadget, and the other half swear by guided systems for repeatable edges. My $260 setup leaves a burr on my boning knife every time at the tip, so what's actually working for you on curved blades?
