DAE meal prep 12 lunches on Sunday and actually feel ahead for once?
Last Sunday I cooked a big pot of rice and beans with onions and a bag of frozen peppers, then split it into 12 containers and stuck them in the freezer. It came out to about $1.10 a serving, mostly because dried black beans at my Aldi in Toledo are like $1.40 a pound. I've been eating them all week and still have 4 left, which has never happened before. Usually by Wednesday I'm buying a $9 lunch at the shop by my work. Now I'm trying to figure out what else freezes well in batches. Does anyone do this with soup and does it get weird after a couple weeks?
