Torqued a stem bolt to 6nm on a carbon bar in my Denver shop and heard a crack, what am I missing about the gauge
Client brought in a 2019 Roubaix and I swapped the bars, hit 6nm on my Park tool per the faceplate print, felt it give a little, and now the bar has a hairline at the clamp, so do I trust the wrench less or the grease I put on the bolts?

Grease makes torque lie. Dry bolts, then 5nm max.
