Yeah, the swearing and no plan part is my old method to a tee. I used to chase temperature numbers like a maniac, poking at the vents every ten minutes. Watching him, I realized he just set it and mostly left it alone. My big change was trying to control less, which felt wrong but worked. My ribs stopped tasting like bitter campfire and actually got juicy.

When you called fire management an art, that stuck with me. My vent tweaks usually involve a lot of swearing and very little plan. Watching someone who makes it look easy must show a real process. For example, did you pick up on whether he focuses on keeping a steady temp or chasing a certain smoke color? What specific change did you make that actually worked better?
