Yeah, the swearing and no plan part is my old method to a tee. I used to chase temperature numbers like a maniac, poking at the vents every ten minutes. Watching him, I realized he just set it and mostly left it alone. My big change was trying to control less, which felt wrong but worked. My ribs stopped tasting like bitter campfire and actually got juicy.

For example, did you pick up on whether he focuses on keeping a steady temp or chasing a certain smoke color? What specific change did you make that actually worked better?

I focused on light blue smoke instead of temp, and my food turned out better.
