Shoutout to the old timer at the Lockhart contest who fixed my fire with one sentence
I was fighting a brisket at a small contest in Lockhart last month when the fire kept running hot and the bark was getting away from me. This guy in a beat up cap, must have been 70, walked over, looked in my firebox for maybe 3 seconds and said "your coal bed's too deep, rake the middle out and let the wood do the work." I did it and the temp settled at 250 within 15 minutes. Turns out he'd been cooking on the same homemade offset for 30 years and never once used a thermometer. What's the best one line piece of advice you've picked up from somebody at a cook off?
