Vent: stop melting butter for cookie dough when the recipe says soften and 3 batches proved it
I melted butter for 3 chocolate chip batches in my Minneapolis kitchen last month and all of them spread into flat greasy pancakes, because softened butter holds air for lift and melted butter can't, so does anyone else have a trick for actually getting soft butter fast without a microwave?
Cold butter makes the dough too stiff to mix, so you end up overworking it, which is basically the same problem. The move is cutting it into small cubes and letting it sit for 15 minutes, way faster than a whole stick. Or grate it on a box grater and it softens in like 5 minutes. And honestly if you're in a rush, just beat the sugar and melted butter longer to get some air back in.
