Skeptical about sourdough starter discard waffles, now I save every scrap
I thought people were just trying to use up waste, but after making them 3 times this week with my 2 week old starter, they're way fluffier than my regular waffle recipe and my husband asked for them twice, so has anyone else ditched their normal batter for this?

It kind of makes me wonder how many recipes we've been ignoring that are secretly better than the classics. Same thing happened to me with using pickle juice in potato salad last summer, now I can't go back. It's like once you find that one small tweak, you start questioning everything else you've been making the same way for years. I'm glad your husband is on board too because that makes it way easier to justify the extra effort.
