Showerthought: My grandma's no-knead bread vs my fancy mixer dough

I spent 6 months perfecting my stand mixer technique for sourdough, then my grandma showed me her no-knead method she has used since the 70s in her tiny Pittsburgh kitchen. Her bread came out lighter and crustier with zero effort on my end. Has anyone else gone back to a simpler technique after chasing the gadgets?

Damp dish towel over the bowl overnight does the same thing as a Dutch oven.

...and honestly that's the thing I keep bumping into. My kitchenaid is great for whipping cream or making buttercream, but for bread it feels like it overcomplicates something that was never that hard to begin with. Your grandma's method probably uses way less water too, right? I notice wetter doughs always get a better crumb but they're a nightmare to mix by machine. Did she give you any tips on how she gets that crust without a Dutch oven?

Oh man @black.jake, damp hands are your best friend with sticky dough. Just wet your hands before handling it and it won't stick to you at all.
