Hit the 1,000 loaf milestone this morning and it caught me off guard

I've been baking sourdough out of my home kitchen for 7 years and somehow that 1,000th loaf on my old cast iron dutch oven snuck up on me, but it made me realize how many small tweaks I've learned since loaf number one, so what number surprised you in your baking journey?
