Overheard a barista in Portland say dark roasts are wasted after noon

I was grabbing a 3pm cup at this shop downtown and she told a customer that dark roasts lose their edges by afternoon, so she only pulls medium for late orders. It got me thinking about how I've been playing it safe with the same bag for months. Anyone else switched their afternoon bean based on time of day, or am I overthinking this?

Man, everything's seasonal now, even coffee. Kinda like how I crave soup only when it's cold out.
