TIL a can of pumpkin puree swaps for butter AND eggs in brownies, and nobody told me for 30 years
My neighbor Deb in Omaha handed me a can of Libby's last week after hearing me complain about egg prices, and she said just use half a cup in place of the butter and eggs in a box mix. I did NOT believe her, but I tried it Sunday and the brownies came out fudgy with a slight orange taste that honestly works better than it sounds. I looked it up after and the pumpkin is basically all water and fiber, so it holds the crumb together without adding much flavor at all. Now I am wondering what else in my pantry is secretly doing two jobs, so what is the weirdest single-ingredient swap you have ever pulled off that actually worked?
