The barista in Portland told me to stop stirring my pour over, and my coffee got 10x better
I was at a small shop in Portland about 3 months ago and watched the barista make a pour over without touching it after the first pour. I asked why she wasn't stirring and she said stirring just makes the bed uneven and lets water rush through the middle. So I tried it at home for 2 weeks with my usual beans and the cup was way more even, no sour spots at all. I do a slow spiral pour, wait 45 seconds for the bloom, then just let it drain. Anyone else ditch the stir and notice a difference, or am I just late to this?
Ever notice how the best results usually come from doing less? Same thing happens with steak, people flip it a hundred times when you really just leave it alone, and bread dough gets better when you stop messing with it. So yeah, letting the pour over drain on its own makes sense, sometimes your hands are the problem.
