I finally get why my old boss kept a paper notebook at the counter

Watched a guy at the hardware counter in Reno write down every special order by hand for an hour while the computer sat there, and it hit me that he knows his numbers cold while I've been leaning on reports that just hide the mess, so how do you all actually track what walks out the door?
