My coworker did that with her banana bread last month. She swore the texture was even more even, and nobody at the office potluck had a clue. Saved her a bunch on eggs too.

Caught my friend mixing powdered eggs into muffin batter. She said they rose just like normal and tasted great. Now she laughs at anyone who calls it a cooking crime, lmao.
