Pitmaster in Memphis showed me his log book from 2019 and I've been doing my timing all wrong
Was down in Memphis back in April helping a buddy at a comp and the pitmaster next to us let me flip through his cook log from 2019. He wrote down the temp every 30 min and drew a little line showing how the fire moved, said he stopped guessing and started reading the fire that season. Do you all keep a log like that or am I late to the party here?
