Paid $160 for a wireless meat probe and it lied to me during my brisket cook
Grabbed one of those fancy Bluetooth probes before hosting a party last weekend. Figured I'd finally stop opening the smoker every hour. Cooked a 12 pound brisket at 250 for what shoulda been 8 hours. Probe read 203 in the flat, so I pulled it, wrapped it, let it rest. Cut into it and that thing was still chewy as leather. Turns out the probe was sitting in a fat pocket the whole time. Trusted the gadget over my own finger test and ruined a $60 piece of meat plus 10 hours of babysitting. Anyone else had a probe give them bad numbers, or should I just go back to the instant read thermometer and my gut?
