My sourdough starter hit day 30 today and I nearly tossed it on day 9
I started a starter back on April 2 with just flour and water in a mason jar on my counter in Boise, and by day 9 it smelled like nail polish remover and had this gray liquid on top. I almost dumped the whole thing down the sink, but my neighbor Deb said to just pour off the liquid and feed it again. So I did, twice a day for a week, and around day 14 it finally started doubling after feeding. Today is day 30 and the thing is rising like clockwork, about 6 hours after each feed, and my first loaf out of it came out with an actual open crumb instead of the dense brick I made back in March. I have killed 3 starters before this one, so hitting a month feels like a real win. The weird part is the one thing that mattered most was just not panicking when it looked dead. Did anyone else have a starter look totally gross around week one and still pull through, and what day did yours finally act normal?
