Swapped my stand mixer for hand kneading after 3 failed sourdough loaves

The dough felt different, took 20 extra minutes each batch, but the crust came out with that open crumb I could never get from the machine, so is the elbow pain worth it or should I go back?

kinda funny how we always think the fancy tool is gonna fix things, but sometimes the simple, awkward version is where the magic actually happens.
