Sour dough starter exploded in my 3 am feeding, what do I do with banana bread batter now?
My starter doubled in 4 hours and bubbled over the jar onto the counter during a 3 am feeding last Tuesday, so I scooped what was left into a banana bread batter but it came out gummy and dense, has anyone salvaged an overproofed starter this way or should I just compost the loaf and start fresh?
Sounds like your starter had a wild night and the banana bread paid the price. Gummy and dense usually means the batter got way too much acidic starter with no baking soda to balance it out, so it never rose right in the oven. Compost the loaf and just feed what starter you saved, it should bounce back in a day or two. Next time maybe put the jar in a bigger bowl at 3 am, lesson learned.
