Showerthought: A regular at my old shop in Buffalo said my sourdough was 'too perfect' and lacked soul.

He told me, 'Your crumb is textbook, but it doesn't taste like your hands made it,' which honestly threw me. Has a customer ever given you feedback that made you rethink your whole approach?

That's actually a really deep compliment in a weird way. He wasn't saying your bread was bad, he was saying it felt like a machine made it, not a person. It's about the tiny imperfections that prove a human was involved. Maybe he missed seeing a slightly uneven score or a little variation in the crust. It's like the difference between a perfect printed font and someone's actual handwriting.
