My 4pm pour over ritual looked totally different last fall

I used to rush through a dark roast in 15 minutes at my desk, but after switching to a light Ethiopian bean and actually sitting on the porch for 20 minutes, I notice I taste way more fruit notes, and has anyone else found that the time of day changes how the same coffee hits?

Wait until you try the same Ethiopian bean at 7am vs like 8pm. I swear the light roast tastes almost sour in the morning but gets this sweet berry thing going at night. Do you think it's your palate being more awake, or is it something about how your brain focuses when you're not rushing? I've been keeping notes on my porch sessions and the temp outside seems to matter more than I expected. Cold days make the florals pop, hot days bring out the citrus. You tracking any of that or just vibing?
